Ingredients (12 Muffins):
6 Eggs
2 mashed Bananas
¾ cup Coconut Flour
½ tsp Baking Soda
Pinch of Salt
¼ cup melted Coconut Oil
¼ cup Erythritol (or another sweetener)
1 tbsp Vanilla Protein Powder or Vanilla Extract
½ cup Chocolate Chips
½ cup chopped nuts
Instructions:
1. In a medium bowl mix together the flour, salt and baking soda, then set aside.
2. In a large bowl whisk the sugar and eggs with a high speed blender until nice and pale.
3. Add the mashed bananas, vanilla protein powder or extract, melted coconut oil and mix until well combined.
4. Add the coconut flour mixture and mix again.
5. Gently fold in the chocolate chips and shredded nuts.
6. Let the batter sit for 2-5 minutes and then spoon to paper or silicon muffin cups.
7. Bake in the preheated oven on 185 Celsius for about 25 minutes, or until a toothpick comes out clean.
8. Let cool before serving.
