Carrot Cake

My personal favorite (Wessel)

Ingredients (about 12 portions):
1 cup shredded Carrot

2 cups all purpose Flour
½ tsp Baking Soda
½ tsp Salt
12 tbsp Butter
1 ½ cup Sugar
2 Eggs
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Cardamom
1 tsp Ginger powder
1 cup shredded Carrot
½ cup shredded Walnuts

1. Mix the flour, salt, soda and spices in a medium bowl.
2. In a large bowl mix the butter and  sugar with a high speed mixer until nice and fluffy.
3. Then add the 2 eggs one at a time to the mixture and mix well.
4. Transfer the dry mixture to the wet ingredients and fold gently.
5. Then add the carrots and walnuts and fold gently again.
6. Transfer to a large skillet covered with baking paper and bake at 180 Celsius for about 20 minutes.
7. Leave it to cool and cut in to smaller pieces.
