Egg & Pepper Towers

Little towers to make for breakfast or as a quick snack!

1 Red pepper
2 Eggs
2 tbsp Chive

Salt & Pepper to taste
Oil Spray

  1. Cut the pepper in 6 long pieces.
  2. Mix eggs with chive, salt, and pepper until well combined.
  3. Spray ceramic heatproof cups with oil and divide egg mixture between 2 cups.
  4. Then place red pepper in the cups and bake in the
    oven for 15 minutes on 185 Celsius or until egg well done and pepper nice and brown.
