Eggs & Veggies in 3 ways (Pepper Eggs)

3 Eggs
3 Bell Pepper Rings
1 Spring Onion (greens only)
3 Cherry Tomatoes

Salt & Pepper
Oil or butter

  1. Heat up some oil or butter on a nonstick pan and fry pepper rings on one side for about 1 minute, then turn
    around.
  2. Gently crack one egg in each pepper, top with cherry tomatoes and spring onion. Cover a pan with a
    lid and let the eggs cook until well done.
  3. Sprinkle with salt and pepper and enjoy!
