Fried Coconut Pineapple
Warm pineapple dessert.
1 Pineapple ring
2 tsp virgin coconut oil
1 tbsp coconut flour
1 tbsp shredded coconut
- Cover the pineapple ring in a mixture of coconut flour and shredded coconut. Use a spoon to press coconut into a pineapple flesh until completely covered with coconut.
- Heat up the coconut oil in a small pan and fry the pineapple on each side until the coconut darkens (do not burn).
- Transfer the fried rings onto a piece of kitchen paper
and top with fried coconut which fell off during the frying process. Spread it over the top and slice in 4
smaller pieces. Enjoy while still warm!
