Green Poke Bowl Lover
2 cm cucumber
3x spring onions (greens only)
1⁄4 green bell pepper
150g lentils (or another legume of choice)
Piece of chicken, fish or tofu
(To increase your daily calorie and protein intake, if necessary)
Fresh herbs (basil, parsley, celery leaves)
2 tbsp olive oil
1 tbsp sunflower seeds
1 tsp manuka honey
- Cook the lentils (or other legumes) in a small pot until soft.
- Meanwhile, cut all the ingredients in smaller pieces and set aside.
- Make a dressing by blending the olive oil, salt, pepper, sunflower seeds, lime, agave, and fresh herbs until you reach a pesto like consistency.
- Transfer the cooked lentils in a serving bowl and top with the rest of the ingredients, drizzle with the dressing
