Green Poke Bowl Lover

Green, green and even more green. <3

2 cm cucumber
1 celery
3x spring onions (greens only)
1⁄4 green bell pepper
1⁄2 avocado

150g lentils (or another legume of choice)
Piece of chicken, fish or tofu
(To increase your daily calorie and protein intake, if necessary)

1⁄2 lime
Fresh herbs (basil, parsley, celery leaves)

2 tbsp olive oil
1 tbsp sunflower seeds
1 tsp manuka honey

  1. Cook the lentils (or other legumes) in a small pot until soft.
  2. Meanwhile, cut all the ingredients in smaller pieces and set aside.
  3. Make a dressing by blending the olive oil, salt, pepper, sunflower seeds, lime, agave, and fresh herbs until you reach a pesto like consistency.
  4. Transfer the cooked lentils in a serving bowl and top with the rest of the ingredients, drizzle with the dressing
    and enjoy.
