Light Summer Salad
Ingredients (9-12 portions):
1x Ice Berg Lettuce
2x Large Carrots
Salt & Pepper
1. Chop the lettuce and transfer to a serving bowl.
2. Open the pomegranate and gently take out the seeds, sprinkle over the lettuce.
3. Grate the carrots and add to the lettuce and pomegranate seeds, mix everything together.
4. Place olive oil, balsamic, salt and pepper next to the salad bowl for your guests to add themselves (do not add any dressing to the salad before serving, otherwise it will become soggy)
