Ingredients (2 portions):
2 Sweet Potatoes
1 Avocado
1 Handful Cherry Tomatoes
1 Scallion (greens only)
10 Basil Leaves
1 tsp Lemon juice
4 tbsp Olive Oil
Salt & Pepper
1. Peel and cut the potatoes in about 1 cm thick slices and bake in a toaster until they are nice, soft and slightly golden (about 10 minutes).
2. Meanwhile, prepare guacamole by blending the remaining ingredients until nice and creamy.
3. Spread guacamole over the baked sweet potatoes and top with some cherry tomatoes, greens or your favorite toast topping (feel free to get creative)!
